What is it with yuri stories revolving in a religious setting, particularly catholic/christian, and calling each other sisters? I don't mind the religious part, but the incest-kinda-stuff is a bit... concerning?

This kind of thing in yuri is inspired by a real-life phenomenon and its associated literature of "Class S" relationships that were common in private Christian schools for the Japanese upper-class in the early-to-mid 20th century.

Calling people you're close with but not actually related to by familial terms is just a thing people do in certain cultures. It's not necessarily intended to invoke incest.
