I just want to say that, as a Fate/ fan, I agree that the Fate/Stay anime is at best decidedly average and at worse shit. But, the anime has jack all to do with Fate/Zero. It's the original Visual Novel that Fate/Zero ties into. And, what I mean by this is that a lot of story lines used in /Zero aren't even touched on at all in the /Stay anime but are covered in the Heaven's Feel route.
What I'm trying to say is that you should try out the VN sometime. It is just a much better experience and does a great job of exploring it's characters, which I notice was a complaint you had regarding the Anime, and the pieces just fall into place in a much more satisfying way.
As an example: In the VN it's explored in detail that the reason why Shirou goes out of his way to save Saber, who he has known for less than a day as you say, from Berserker is because he has a guilt complex as a result of surviving the fire at the end of /Zero where as many others died in front of him and he was the only one saved. So, he goes out of his way to save pretty much anyone he can and often times puts himself in serious danger because of it. Sure, his logic is "broken" but the story knows that and runs with it. Unfortunately, the anime barely even touches on this.
Anyway, I'll stop here. I just wanted to, as a fan of Fate/, defend the excellent VN from opinions based on a crap adaptation. I really hope Ufotable gets a hold of the series and does it justice.
Oh, and if you haven't, DO NOT watch the Unlimited Blade Works movie. It's even worse than the TV series, imo. All it would really serve to do is ruin one of the best parts of the VN.
