Any idea why this anime's source - a novel isn't on MAL?

It's not a light novel. It's an "actual" novel for lack of a better word. The same author of the novel of Uchouten Kazoku by the way.

MAL only lists manga and light novels. This is also why the Shinsekai Yori novel isn't here either. It's an "actual" novel.
