You should also give "Gin no Saji" a watch. It's one of my favorite slice-of-life anime of all time. Although it is completely different from "Uchuu Kyoudai", since it is about farming, it gives you a feel good type of emotion whenever the main character improves on something!
I also noticed on your plan to watch that you have "Hikaru no Go". That is also a really good anime. Major character development throughout the show that will leave you cheering for the MC. The act is a bit dated, but after a few episodes you should get use to it. The soundtrack is always very memorable since they're all catchy!
