Fate/Stay Night is the original series.
First was Fate/Stay Night, then Fate/Zero got released since there were a lot of things that needed explaining.

My 3 suggestions are Campione, If you're looking for more of a harem anime, which has a pretty good story.
Second one would be Fate/Stay Night or Fate/Stay Night Unlimited Bladeworks. It's more on the action side, not the romance side, It was based off of an awesome VN.
And third and most important one: Kaichou wa Maid-Sama!
My favorite romance manga, but the anime is good too, and may set you into reading the manga xD
