1) He is literally doing all those things but with the small downside of oh I don't know not knowing how powerful the unknown world tier item users are or how much they know. Ainz's mindset is that he isn't special or invincible. World domination serves the dual goal of sending a message that Nazarick isn't weak and increasing their strength (e.g they have a lizardman army now)
2) They do have plans though. Momon, Jaldabaoth and Sebas are all part of larger schemes that I'm not going to spoil for you. Also remember the Eight Arms the criminal organization? Remember that they CAPTURED the leaders?
3) This is just a personal preference thing. I can root for Ainz because the story originally started from his perspective he might be "evil" but he values his comrades, is a skilled strategist in PvP fights and the catharsis of watching an unstoppable force of nature steamroll the stereotypical fantasy heroes in the form of Climb and the gang is quite refreshing.
1) Please list some of these other ways because the way I see it none of them would be as effective. Also he knows his guildmates aren't there he's doing it to get the attention of any other players who exist there y'know seeing as the world is an almost exact replica of the game he came from and he has come across world tier item users in the form of people who brainwashed Shaltear.
2) This is a matter of opinion, honestly I think it makes Ainz more likeable to have anxiety and it makes sense seeing how he was a 30 something year old salaryman. If he suddenly started pulling Aizen level """plans""" out of nowhere that would just be bad writing.
3) Psychopaths are still human so human morality still applies to them, if for example a pride of starving lions somehow found their way into a nursery and ate children you wouldn't call them evil would you? Ainz might be sentient but he's not human anymore and is only evil from a human standpoint. One of the basic instincts of the undead is hatred for humans, if anything the fact that he views humanity with indifference instead of the hatred common to other undead is a positive.
I read your Overlord III review and I believe you're missing a few points:
1) Ainz does have a good reason for doing what he is doing, he wants to spread the name of his guild through world domination in order to get the attention of any players that might exist in the world.
2) The show establishes that Ainz isn't as smart as his subordinates Demiurge and Albedo and one of his main challenges is trying to appear as smart as they believe he is.
3) Ainz no longer has human morality since becoming a Lich so to him none of his actions are actually "evil"
