This show has a European medieval fantasy kind of reality. There aren't many (biologically) old people in this show and the oldest heads are probably in their 50's/60's max. For the setting, it makes sense that that kinda stuff happens young due to the life expectancy, especially because of dangerous shit in the world of Re:Zero.

I don't like Echidna because her actions aren't in line with my moral. But she is not a villain because she isnt simply "evil", she does whatever she feels she wanna do to expand her knowledge, and depend on your moral, you would think she is right or not. She experiments on Ryuzu but she got Ryuzu's consent for it, she left Beatrice a lonely life but Beatrice is created by her anw, she has the right to do whatever she wants to do with Beatrice. She left Roswaal because what, she died, and she didnt ask Roswaal to do such thing as to "end" the Santuary for her. Everything happens with Beatrice and Roswaal is due to Echidna's inability to understand human emotion.
