Which do I read first?

I feel that you don't know what "Prequel" really mean , so i will tell you , just in case. (You have watched the Monogatari Series , so you should know tho...)
"Prequel" is a term used to describe a work that happens before a pre-existing work , it doesn't mean that you necessary need to read it in first.

Hokuto is the original Manga , while Souten tells the story of one uncle (I don't remember who's he exactly , but they have to be related in a way) of the Kenshirou of Hokuto no Ken that happened way before (~80 years before if i remember correctly) and Regenesis is the continuation of Souten.

So the order is Hokuto no Ken > (All Spin-Off/Side Stories etc. related to Hokuto) > Souten no Ken > Souten no Ken : Regenesis.
