My first attempt at watching it ended after 4 episodes. I liked it but wasn't in the mood for this kind of show at the time. I'm about done with 2005 anime and plan to finish the OVAs and the second season.

I'm not really talking about something with a similar plot or anything, I've watched over 100 anime, a few dozen manga, and haven't come across anything like this.

What I mean is something that is very atmospheric, great story telling, and/or mature.

Mushi-shi does a better job of making me care about it's characters in 20 minutes than most anime do with multiple seasons.

Rainbow: Nisha Rokubou no Shichinin - Just like you asked for, atmospheric, great story telling and very mature. It's one of my personal favourites. I haven't seen Mushishi but I don't think they're anything alike, but you did say you didn't want a similar story so here you go.

I'd definitely recommend Kino no Tabi and Natsume Yuujinchou. Kino no Tabi has a deep, philosophical vibe to it. Natsume Yuujinchou is more heartwarming and has many similar elements as Mushi-shi.
