preferably something with romance and/or comedy even if there not the focus of the show, im tired of watching shows that end just as fast as they start.

itd also be nice if they had a satisfying ending, as in no or not many open ended plot points/relationships

Cromartie High School (best comedy anime ever imo)
Dai-Guard
Fullmetal Alchemist (2003, and also Brotherhood)
Great Teacher Onizuka (it ends halfway through the manga, yes, but it's a pretty good stopping point)
Higurashi (though season 2 isn't dubbed)
Key the Metal Idol (the last two eps are like, 90 minutes)
Noein
Outlaw Star
Princess Tutu (don't let the name fool you)
Tengen Toppa Gurren Lagann
Tiger & Bunny
Trigun

I don't know how you'd interpret the ending but I kinda accepted it.

It's been awhile since I've seen most of these, so I don't remember how open ended (if at all) they were.

Hana yori Dango (51 episodes. Genres: Drama, Romance, School, Shoujo)
Cardcaptor Sakura (70 episodes. Genres: Adventure, Comedy, Drama, Fantasy, Magic, Romance, School, Shoujo)
Ouran High School Host Club (26 episodes. Genres: Comedy, Harem, Romance, School, Shoujo) (Has a bit of a open ending)
Inuyasha (167 episodes. Genres: Action, Adventure, Comedy, Demons, Fantasy, Magic, Romance, Shounen, Supernatural)
Princess Tutu (38 episodes. Genres: Genres: Comedy, Fantasy, Magic, Romance)
Fruits Basket (26 episodes. Genres: Comedy, Drama, Fantasy, Romance, Shoujo, Slice of Life) (Open ending)
Kaleido Star (Episodes 51. Genres: Comedy, Drama, Fantasy, Shoujo)
Yamato Nadeshiko Shichihenge/The Wallflower (25 episodes. Genres: Comedy, Shoujo) (Open ending)
Tengen Toppa Gurren Lagann (27 episodes. Genres: Action, Adventure, Comedy, Mecha, Sci-Fi)
Trigun (26 episodes. Genre's: Action, Comedy, Sci-Fi)
Azumanga Daioh (26 episodes. Genres: Comedy, School, Slice of Life)
Samurai Champloo (26 episodes. Genres: Action, Adventure, Comedy, Historical, Samurai, Shounen)
Gakkou no Kaidan/Ghost Stories (19 episodes. Genres: Genres: Horror, Mystery, Supernatural) (I know it's only 19 eps rather then 20+ but if you looking for a good comedy I'd recommend this. The ADV Films dub of this is basically an official abridge series. It's pretty funny, if you like dark comedy).
