I'm looking for an anime series that deconstructs a particular genre (like how Evangelion deconstructed the mecha genre). What shows should I watch that do this?

Bokurano- Even darker deconstruction of the mecha genre than Evangelion.
Aku no Hana- A very subtle deconstruction of romance and love triangle anime.
School Days- An infamous deconstruction of the harem/ love triangle genre of anime.

It completely changed the predictably you think it happens in each episodes, has psychological moments, great characters with excellent villains, and is fun to watch. Don't know if this explanation will help you.

Though I warn you about reading it since there are spoilers. But the main gist of it is that Hunter x Hunter deconstructs shounen tropes, or content usually found within shounens, specifically battle shounens (not the shounen genre because shounen is not a genre). And the series mainly does so through its villains (which should not be in a manga for kids) and its main character (which is not a typical battle shounen protagonist).

Whether you consider that a deconstruction of a genre is up to you.

Zambot 3 deconstructed the mecha genre a lot earlier than Evangelion and, IMO, did a better job of it as well.

From the top of my head..

1. Main character fails more than he succeeds.
2. Not so typical villains.
3. Some arcs end in an anti-climatic manner.
4. Fights are logical (more brains, less brawns), realistic (no asspulls) and short (in comparison to other battle shonen).
5. People die when they are killed.
6. The "innocent and pure" portrait of the main character takes a big blow in the current arc (i got spoiled on this one).

In the end, the storytelling is REALLY unpredictable. The story, for the most part, does not go the way you want or expect it to go.

I heard Mahou Shoujo Madoka Magica deconstructs the Magical Girl genre or the aspects of it. I'm no expert on this though and can't confirm it.
