So, since Season 1 adapted up to Volume 8 of the manga and there are 6 volumes left, is it safe to assume Season 2 will cover till the end?

yeah, i think it's very safe to assume that. this season will most likely get similar amount of eps and just finish the adaptation!

It would be very strange if it wouldn’t get fully adapted judging by the chapter count left, the second season needs a 2 cour adaptation because it is fast paced and the best arc of the manga. I am glad that trigger is behind the adaptation so I guess it will be another 24 episodes (or 2 cour). Now, if Frieren also gets second season announcement then I wouldn’t ask for more.
