I recently found Hunter x Hunter (2011) and I loved it. I am looking for something similar. I want a anime with plenty of fighting scenes and good character development.

I loved Hunter x Hunter, Cowboy bebop, Samurai Champloo, Code Geass, Fate/Zero, Hitman Reborn, Trigun, Bleach, Dragon ball z, et cetera.

I keep trying to watch Gintama, but it doesn't have what I am looking for. I keep getting bored. I also don't care for ecchi and I'm not too big on magic.

Please take a look at my list, or just recommend me your favorite action, adventure, shounen, fighting anime. Thank you!

The quality of the Gintama fights don't really up up til you get to Gintama', which is when it becomes HD. Not exactly the best video but here is an example from the movie which holds the same quality as Gintama' and Gintama Enchousen.

I can't say they're spectacular but the Full Metal Alchemist Brotherhood fights fall under the shounen category, which seem to be what you're looking for.

Not sure if it is your thing, but you could give Darker than black a shot.
Really liked it and the fights look awsome (imo).

katanagatari (i enjoyed the fight scenes in this as well as the characters)

Sengoku basara (if you are purely looking for fight scenes you may like this one, some of the characters are portrayed as ridiculously strong, but they are all fighting to maintain something)

-Kore wa Zombie Desu ka?
-Seikon no Qwaser(it is action like what you want but it is for mature audience)
-Sekirei(also what you want but has ecchi and nudity)
-Sword Art Online(really good, has a lot of action, and very unique)

None of these are on your list so I assume you haven't watched them.
Good luck finding one that you like.
