Why do you think Verloren loves Eve that much that even thousands of years have passed, he (as Ayanami now) is still willing to sacrifice everything just to find her?

I wouldn't say that he is willing to sacrifice everything. But usually Gods are like that in stories. Their love is something extraordinary. :P
