I haven’t seen much of Gundam, I’m planning to get into it but I was wondering if I could just watch this without watching any other Gundam series, also can I just watch this and not the series version of this movie?

GQuuuuuuX demands the audience be extremely familiar with the original 1979 series (to its detriment) and most of its major plot beats will make no sense otherwise.

No, God no. You will be insanely confused. Gquuuux assumes that you have at least seen the original gundam. But if the 1979 seems too dated you could always start on something from a different timeline like Iron Blooded Orphans or Wing.
