I just finished Steins;Gate (TV + OVA + Movie), and was literally the best watch of my life.
Started a bit slow, but holy cr4p... it destroyed me on a whole new level.

Now I dont know what to watch next. I would enjoy a good seinen anime, gore is also nice but not obligatory for me. The anime should take itself seriously. I also enjoy a little bit of romance (but it shouldnt be too much).

there are some shows that interest me:

-Gintama
-Code Geass
-Angel Beats
-Accel World
-Neon Genesis Evangelion
-Ghost in the Shell
-Gantz
-Black Butler
-Monster
-Claymore

maybe I go with Angel beats first, because it wont be such a looong run (I prefer finishing a series before starting another). I am kind of reluctant with starting Gintama for that reason (~270 episodes will take me forever to watch).

do you have suggestions for me? What should I watch next?
I already heard from other people that I should go with evangelion or Angel Beats first.. your thoughts on that?

code geass should be on the top of your list . but watching angel beats is a smart thing to do cause its only like 12 episodes i forget.

i would gintama for last

I also thought of this one. Its listed under notable films here: https://en.wikipedia.org/wiki/Cinema_of_Japan right next to Hana-bi, Battle Royale, Grave of the Fireflies, Godzilla and Spirited Away. It must be epic.

Btooom! fits a lot of the things you put up there, and it's not that long.
It has some romance( Not that much really and it isn't the main focus of the series)

It takes itself pretty seriously too.

I decided to watch Btooom! and Angel Beats first, after that I will watch Ghost in the Shell and neon genesis evangelion. Nr.5 will be code geass.

My personal favorite that seems to mostly fit your bill is Honey and Clover (Hachimitsu to Clover). It does have romance in it but there are so many other things going on that it's seen as a great part of it, but not the only thing keeping your attention. It's more mature and deep as they're all in a university setting, some are even well past their graduation yet still attend (Morita). It deals with a lot of real lessons that resonate with you, and the comedy is spot on at times. I just hinted at him, but Morita is my favorites anime character of all time right beside Kyouma in Steins;Gate. It has 2 seasons as well and it's one of the better coming of age stories I'e watched and think you'll enjoy it on a similar level if you haven't already. This has zero action however, it has a couple of tense moments, but really it's just an amazing set of characters going through university life together finding out what they truly want to aspire to be, all through different means.

I'd say black lagoon but note This is one of my brother's favorite animes I haven't watched this yet so i can't tell you my personal Opinion .

If you want a serious seinen series, Gintama is your worst bet.

Stay away from Gantz and Code Geass, I'd go with Neon Genesis Evangelion and Ghost in the Shell. I also recommend Baccano, Perfect Blue and Kara no kyoukai ( all the 7 movies ).
