I’ve seen the endings of Evangelion (for series and movies) which one is canonical? I’m confused

As of the release of Evangelion 3.0+1.0: Thrice Upon A Time, the ending in mentioned movie is canon, as it provides a conclusive, definivite & straightforward ending to not only the original series & the movie End of Evangelion, but to it's manga & the Rebuild Movies as well.

They gave you the answer already. All are canon. NGE is original content (The manga was released after the Anime aired) so by technicality Manga is just reimagining the concept and giving just another ending (Meant to be more light hearted and satisfying after the Anime released the final 2 episodes without any budget)
The End of Evangelion is the True ending as the author intended. The 4 movies are also meant to complement the same ending.
3.0 + 1 is the TRUE/SHIN Ending and final Epilogue because that one brings the complete conclusion to the whole franchise so that one is the absolute canon closure.

Both. The ending of Neon Genesis Evangelion (the anime series) is what the characters are experiencing in their minds. The ending of The End of Evangelion (the movie) is what’s actually happening.

Both TV show and End of Evangelion are canon as they're happening at the same time from different points of view. The same events happen, EoE shows you visually what's happening, and TV goes in depth with the events occurring in EoE. Watch the TV ending first.
