Well I've only watched anime of both so I'm basing all these on terms of anime.


Starting of with FMAB,

FMAB is probably one the finest and most complete form in terms of anime, story-telling and philosophy.
It's philosophical teachings were so meticulously and subtly explained or portrayed in the anime.
Fundamental Philosophical topics like :-
Philosophy of truth.
Philosophy of equivalent exchange.
Ultimate meaning of alchemy.
Meaning of Death.
All these elements were in FMAB and were showcased brilliantly.


Now talking about Steins;Gate,

Steins;Gate is the epitome of Sci-fi anime.
And the best in time travel in any medium(movies/Tv series/anime/manga/novel, etc).
This primarily being a Sci-fi show people think there won't be any philosophical element in it and won't be necessary either, but there are so wrong.
This is one of those exceptional show out there where it blended philosophy with Sci-fi effortlessly.
It has its own philosophy like:-
Philosophy of Steins;Gate.
Philosophical elements of parallel universe.
Meaning of Reading Steiner.
But question arises does it have more than FMAB?
To simply put it, No it does not have more philosophical element than Steins;Gate.
But taking consideration into nuances and in-depth analysis of both. Both of them has pretty excellent philosophical understanding. Rest is upto people's subjective tastes.
Both are masterpieces philosophically as well.
