Now before you say anything I'm not saying this is a problem with all long anime, but a lot of long anime suffer from the negatives I'm gonna point out in this post, so before you post any negative comments please read the blog post first

Firstly, the problem with fillers
We know long anime like Bleach and Naruto have a lot of filler, this is usually done so the anime does not catch up to the manga, to do this the anime studio usually does 2 things, either take a break (eg. Black Clover, Gintama etc.) or produce a lot of filler episodes as they are afraid to lose the hype of the show which to be honest Black Clover also suffered, or something out of the blue like the 2003 Fullmetal Alchemist where the studio just preferred to diverge from the manga story and go a separate path instead of making lots of fillers which I really respect.
Now, I'm not saying all fillers are trash or anything I love the G-8 arc from One Piece (Which I didn't know was a filler until recently) but I'm saying that it's a waste of time that puts a damp on the rep of the show

Next topic I want to say is pacing
Pacing is one of the major problems for a long running show, the main example I'm going to use is One Piece, the shows been going on for over 20 years now and my god is the pacing bad, I know it's been running for 20+ years but I feel like One Piece is that ONE anime that could really benefit from fillers or even a break. People have been comlaining that everything post-timeskip has not really matched up to those pre-timeskip but this is not a problem of decline in story but a problem in pacing, Dressrosa and WCI are the main examples as they were both incredible arcs with horrible pacing, even in Wano right now the pacing been bad, with the exception being the parts on Rogers crew, but after that the pacing got bad again espicially the execution.

Now, i'm not saying that every long anime suffers from these tropes, anime like HxH, Gintama, JOJO's, are great shows that do not suffer from these tropes. but the Big 3 and some other anime do.
