so I like the overall tone and feel of mushishi, but not so much the fact that it's episodic all the way through. is there any similar anime with the inclusion of character and plot development?

I doubt there is anything related close to Mushishi.

I recommend Wolf’s Rain, not episodic, has a good amount of supernatural mystery like Mushishi, the main cast are travellers and it’s pretty chill for the most part except for the final episodes

Natsumes book of friends was boring af imo. Didnt like how cutesy it was. It almost seemed like a mockery of such beautiful japanese lore imo. But thats just my opinion. I found mushishi to be vastly more tasteful and interesting.

I would second Dororo. I think its a fantastic story myself.
He died doing what he wanted, no matter what, right? I bet he was happy.

Good luck with berserk Kouji Mori, you'll need all the help you can get. We believe in you.

Mononoke sort of has a similar vibe to me and I love both of them so much. I really recommend it. It is sort of a slow paced anime like mushishi but it’s so good!

Natsume Yuujinchou, Haibane Renmei, and Saraiya Goyou.

You're welcome
