As for actual yuri stuff. Well, I'm sorry but I'm always apt to recommend to read about things alongside actual watch. So it is advisable to know at least a little about 'reception of female homosexuality in Japan' (hint: it differs from the West) and about so called Class S genre. Wiki articles are ofc enough. There is this very old "all-female musical theater troupe" called Takarazuka Revue, history of which is quite telling in those aspects.
But if you want anime anime, for Class-S genre there is this classic Oniisama-e (which I watched a very long time ago and don't remember clearly) and Mariasama-ga miteru (which I haven't watched). All I'm sure of that both are the highest ranked of all yuri shows and they are both full of melodrama.
However, the best yuri show I saw is Aoi Hana. It's a really divisive one (many people consider it shit, I personally think it's ridiculously good for what it is, it has even some fans on r/anime, out of all places), so it's hard to guess if you'll like it.
But that's not that big a problem, because I actually believe before Yuri Kuma it won't harm anyone to watch also some bad yuri shows. And maybe even some yuri fluff (Sakura Trick, Candy Boy) - but this type is entirely optional
Oh, I remembered - there is this one additional very new show, which should suit your needs perfectly - Hibike Euphonium!
But now that I think of the shows I mentioned I'd hesitate a little over White Album 2. I wouldn't call it sexist, but it is something which deserves label 'conventionally moral' and, well, it's actually pretty hard to describe without specific spoilers. So probably not the best example.
I looked at your list and you haven't seen any Ikuhara works neither any classic shoujo-ai - so I believe watching Yuri Kuma may be a difficult experience - for me it really was in identical situation (I dropped it initially because it seemed ridiculous and pointless). But I'm not particularly perceptive so you might fare batter. still, probably some acquaintance with yuri genre before wouldn't hurt - YKA is a show about 'lesbians', but I believe viewed through Western lenses only it loses significant part of its meaning.
And yes, yes, yes, Korra is so much better than Avatar it's worth preaching :) even if it warrants you hateful stares of the environment :)
