I rate my anime on an interest based scale. I do my best to quantify how engaged I feel when watching a show and the impression it leaves on me episode to episode, as well as once I finish it. Here's the general meaning behind my rating scale:
Unforgivable: Reserved for anime I have completed. Always something that is so abysmally bad I fail to understand how it maintains its existence in the physical realm. Typically something I watched as a test of will or as a joke. Will never watch again under any circumstances, unless it is short enough to baffle a friend with. Please don't even acknowledge that these exist.
Disgusting: Reserved for anime I have completed. Something so bad it's a wonder it was released to the public. Only better than a 1 because it wasn't actually a complete dumpster fire in at least one area, like art design or voice acting. Please don't ever consider watching these.
Painful: Reserved for anime I have either completed or watched up to the last 3/4 of. Always so bad that finishing them was taxing on every level (physically, emotionally, mentally, spiritually, etc). Possibly started out enjoyable, but bad writing, poor animation, or unlikable cast ended up leaving me extremely dissatisfied. Watch at your own risk.
Uncomfortable: Reserved for anime I have either completed or watched to the midpoint. Signifies that the show was just... bad. It may have started out as enjoyable but only ended up being a total disappointment. Avoid these unless you are absolutely sure you have nothing better to do.
Disinteresting: Typically anime that I may have had hopes for but only ended up being poorly made on most levels, or generally disinteresting. Not bad so much as just not able to hold my interest enough for me to feel like I should keep watching much more (though I probably will). I wouldn't recommend them and I sort of regret taking the time to watch them.
Acceptable: Usually anime with this rating are ones that could have been significantly improved, but for understandable reasons they fell short. Maybe they were paced poorly, had poor animation quality, or exhibited narrative issues that made them hard to enjoy fully. I wouldn't recommend them, but I don't especially mind that I watched them.
Enjoyable: Usual starting point for most of my ratings. If a show's first few episodes don't do much to wow me, but are still entertaining enough for me to keep watching, it will receive this rating until I feel it deserves otherwise. Anime in the later stage of watching or completed are ones that were simply good. Not too special, but generally engaging and inoffensive enough to watch. Would recommend if you're already interested.
Exciting: Anime that actively motivate me to watch them above other ones. Probably will rewatch them if the opportunity presents itself. Usually they are intelligent or just outright entertaining to the point where smaller details don't matter as much. Would always recommend to anyone who's on the fence about it.
Amazing: Anime that have I am either actively binging or am actively setting aside time just to watch. Candidates for being promoted to a 10 upon completion unless something about the ending doesn't feel appropriate or there is a single glaring issue that can't be ignored. Would always recommend to anyone unless you are explicitly uninterested or unwilling to be interested in the show's content.
Unforgettable: Reserved for anime I have completed. Anime I rate a 10 aren't necessarily perfect, but left me feeling satisfied, invigorated, or otherwise impressed with the work as a whole. Would recommend to anyone, full stop.
