It doesn't mean that you don't like anime anymore when there are things you don't like! :) In fact, there are so many good things that avoiding the bad ones just raises quality and enjoyement.

In the end the way you watch anime (or experience other media) evolves with you and your experiences. Btw, I like the medium even more than a few years ago.

I think in part I understand, but can't say I know how to relate XD I mean, among the things you watch there will be great things, average things and bad things... Maybe you just need to see enough stuff to start to be pissed off by low quality bullsht, who knows.

I had the opposite experience with Madoka: I started it while I was actually thinking it was some other anime, so it was something I knew nothing about. In the end I liked it a lot, and it has a high "rewatch value" too.
