I usually have the tendency to overrate anime because I'm a tolerant and forgiveful person.
You can mainly understand my anime preferences by seeing my favorites, but there's much more stuff I like than doesn't actually make it to my favorites list.
I can watch any genre and I had actually never stumbled upon an anime (or any sort of existence, from people to concepts) that I hated. I mainly dislike weak (more mentally than physically) characters, so obviously I tend to like powerful characters. I especially dislike most female tsunderes, but I have a tendency to like male ones.
If its genres, I really like Sci-Fi and psychiological stuff. If it's romance, I prefer josei over shojo. I usually enjoy well made comedies (who doesn't?). If it's music, I prefer rock and powerful female voices, but, just like with anime, I can enjoy any genre.
I, let's say...get along with cliches. It mostly matters how the base concept is interpreted in an anime, but I mostly tolerate them (there are very few things I can't tolerate) and sometimes end up liking them.
I rate my anime mainly based on the enjoyment the series delivered me. Than I evaluate it's overall quality as a work (starting with the story, but most importantly visuals and soundtrack, than characters, scrip and the flow of the story). I will give an enjoyable series a high score even if it's quality isn't very high and I will give a high score to a series that I didn't enjoy that much if it's good quality - and here by quality I mean mainly the story. As an example, I give Uta no Prince-sama a 10 because I fully enjoyed it, even though I'm aware of it's overall quality as an anime and I gave Robotics;Notes a 9 even though I didn't enjoy it that much because I think its overall quality is very high.
I don't usually read that much manga, and my list is mostly filled with BL because there's not that much animated material related to this genre.
I also play visual novels, mainly BL and otome. I have a tendency to go for shota characters in VNs, as long as they don't seem to be weak (let's say...Rin from Togainu). My visual novel list
