Just read your Fate/Stay Night review. There are some points that I agree or disagree about, but since you are clearly not familiar with it: Read the Visual Novel it is based on, hugely superior. That novel (and the Fate/Zero anime admittedly) is the reason, why Fate blew up as it did. The main problem with the Deen Anime is that they tried to incorparate a bit of all 3 playable routes, which made it quite hard to watch, especially the second half. This anime would really need the remake by ufotable, the studio more or less married to Typemoon by now, but they are busy with Kimetsu no Yaiba this season...
Aside from that, the Genderbender of Saber confused me back in the day as well, but even until this day Saber is one of my favorite characters. And to be fair, a person who we can't even say whether they existed or not might as well be female and hide their gender, right? If there is something to criticize it would be the modern Saber-facing the creators of Fate/Stay Night do. And Genderbendering like every second hero at this point. But don't worry, as long as you don't get into the newer Fate Franchise such as Fate/Grand Order or Fate/Extra, you will be fine.

One detail in your another review. As far as I remember, there is a surefire way to avoid the curse to kill more students (not talking to 'it'), so not every year students died. Also that's not a matter that you can just go and tell the police. Maybe that class should have been sealed off completely, but that's a little far fetched when all of this was in reality nothing more than an urban legend at first glance.

The part with fire is very true, I remember that vividly lol. That was nigh unbelievable.

About the main heroine knowing, well, if you watched the OVA (or simply her behavior the entire series) you would know she was quite a doom and gloom person, especially considering how she was ignored for the longest time because everybody believed she was the cursed student. Why would she care about them dying? (I don't remember if at some point she showed remorse or starting preventing their deaths, I watched this in 2012).

Anyway, good stuff.
