When I watched it I didn't really know the whole scene it had since back then I'd just pick random anime and force myself to finish them (cuz some would end up being good, but I can tell much sooner now lol). There is a chance it's not the type of psychological exploration you're looking for, but I can say with certainty there is a lot of stuff going around it about "empathy" and the "hedgehog dilemma".
To me I look for intriguing ideas most of all, and not only did Evangelion give me some interesting lore and characters, it did actually give me a lot to connect with. I usually watched a lot of SOL/escapism, but this show was something I felt actually challenged me personally (while at the time being more confused than anything).
If you ever headed the warning of passing up the Berserk movies for the anime, the Rebuild situation is more clear-cut of sticking with the anime first imo - but it's a nice secondary watch. Hope you come to like NGE, and no problem was nostalgic talking about that lol
In high school was when I first watched Evangelion and I thought the show was kinda meh, but for some reason it kept me marathoning it to the end. I then got to the final two episode before EOE and was like, "Wtf is this shit, screw this", then I skipped to EOE and - like you - thought something about it was masterpiece-level. I'd only have EOE in my favs, etc.
But then I stopped watching anime all-together for like a year and switched to manga. I saw Evangelion manga on sale and got and read them all. Was pretty good, but I thought something felt off from how the show made me feel. I decided to finally rewatch the show (now like 5-6 years later), and man is the entire show fantastic. There is so much subtlety that I missed, and those final two episodes are brilliant - it's full deconstruction of the characters and their issues made clear to eachother. I used to blow off the show, now I got three posters in my room lol.
I guess I don't know how much you'd relate to it, but personally it set me straight on a lot of things. Therapeutic and thematically a masterpiece. I prefer last two eps to EOE now, but damn is EOE well-made and fun to watch.
Rebuilds, at best, are made in frustration to the creator's entrapment in the Evangelion franchise. At best, the last film will deconstruct the idea of remakes itself. But as a reflection of the themes of the original show/movie and what made them good, Rebuilds are very shallow.
