They aren't in a sequence. Hellsing the original is just a bad and incomplete adaptation of the manga. Hellsing Ultimate is better animated, more entertaining, and just a better series all around. The original Hellsing is more serious in a way and has a script written by the legendary Chiaki Konaka. However, Hellsing wasn't meant to be serious. It's a story about Abraham Van Helsing's grand daughter reviving Count Dracula and forcing him to save England from an invasion of Nazi vampires and Nazi werewolves! It's a silly series and the stupid humor of Hellsing Ultimate fits perfectly with the absurd plot.

It's not closely based on the books, but uses the characters because they're public domain. In this series, Moriarty is an idealistic anti-hero who helps peasants get revenge on English nobility who have wronged them but are above the law. However, Moriarty still results to cruel and brutal methods to get his results and is still clearly not a good guy. However, it's an interesting spin on the character that makes it more akin to Death Note.
