Of your list I've seen Fullmetal Alchemist, and am currently watching brotherhood, seen My Hero Academia and Haikyuu everything else, seems new so yay :D

My Roommate is a Cat - excellent Slice of Life one, very touching, parts of it made me cry, and other parts made me feel all warm and gooey
The Chivalry of a Failed Knight - May be seen as a bit generic, but I feel it is a really good show, fun to watch and is just enjoyable imo
BOFURI I don't want to get hurt so I'll max out my defence - This one is just so much fun to watch, it's just a little be silly, but it is just fun to watch
Sword Art Online - This is my most controversial pick, but the internet as a whole is split on whether they like it or not, you'll find the people who don't like it are VERY vocal about it, but it truly is a good anime and it's popularity is a result of that
