Things I value the most in anime:
Music - Is that beat bumping? Can it elevate a scene to otherwise unattainable emotional highs? Does it set the mood? Is it appropriate?
Drama - Is the conflict meaningful? I.e. do the characters develop by engaging in and overcoming conflict? To what extent are they dealing with emotional themes?
How I got into anime:
Met a girl in the library and she asked if I watched anime. I said "no". She recommended a few series. Boom.
