10 Most Important Anime (to help shape how I view anime today. In no particular order):
1. Fullmetal Alchemist: Brotherhood. First anime I ever watched with full knowledge that it was anime.
2. Highschool DxD. First anime that someone recommended to me and sent me on my path of ecchi in high school.
3. Death Parade. Helped broaden my perspective of anime as a medium to more than just action and tits.
4. Clannad. Helped shape how I view characters within an anime, necessitating realism and connection to make them good.
5. Mushishi. Helped shape how I view storytelling and world-building within an anime.
6. Your Lie in April. Reawakened my love for classical music and made me less of an elitist critic.
7. Anohana. Got me into drama and was the first anime where I cried at the end.
8. Gurren Lagann. First anime I watched with a group of friends.
9. Inferno Cop. Gave me faith in the anime medium again when I had no motivation to continue watching.

How I score shows:
(10) Pretty much perfect, any flaws can be easily overlooked. Well-executed exposition and incredible world-building, aesthetic, characters, and animation, along with a nice amount of depth in the narrative that sets it apart from other anime without being pretentious.
(9) Really, really good, but had a flaw or two that stuck with me, or just didn't have that certain depth required for a 10.
(8) Did what it set out to do, and did it well. Very enjoyable, but mostly for enjoyment's sake without really contributing anything worthwhile. Would still recommend to people.
(7) Did what it set out to do. Nothing else really stood out to me but I still enjoyed it. Would still recommend, but it depends on the show.
(6) Had potential, but it flopped somewhere and it prevented me from really enjoying it. 6's and below are not worth rewatching.
(5) *sigh* Did absolutely nothing right. Sounded cool at first, but continued to be shit with almost no redeeming qualities whatsoever. What a 4 would be, but was tolerable enough and didn't make me mad, just disappointed.
(4) This is my anger zone. Any show that makes me physically angry at how stupid it was and how much it wasted its potential. Plot sounded good enough for me to watch, but was executed horribly. Characters were trash. Everything was trash. FUCK.
(3) For fuck's sake. Just... why?
(2) I physically cannot fathom how these shows got made.
(1) What I show to my friends to confuse and terrify them. The bottom of the barrel. What I watch when I'm feeling masochistic and hate myself, or feel like challenging myself to see how long I can last without wanting to put a bullet in my head.
Every show is scored standalone based on these criteria. Later seasons are generally rated based on the added factor of how well they continue and add on to the core series, hence why later seasons of Aria and Spice and Wolf have higher ratings. My ratings are kind of saturated because I mainly watch shows I know I'll enjoy unless I'm feeling masochistic or take on a bet. Partly because if I start a show, I want to finish it, but also because I like to give shows as much of a chance as possible to redeem themselves, no matter how shit they are.

Keep in mind that all 3 seasons of Mushishi are grouped together as my favorite anime of all time (not including the specials). Oh, and Inferno Cop is a 10, even though it's not on my Favorites list, because it gave me faith in the anime medium again.
Ashita no Joe looks interesting but 79 eps?! It's definitely been way too long since I've watched old animes with a high ep count.
I love Lupin III! Though I haven't started the new series, I've watched nearly all the movies.
I agree that Gundam is solid as fuck and one of the most lowkey popular shows out there; that shit comes with a new season or remake every season.
Man I have so much motivation for re-watching shows rather than starting new ones. For mecha I recommend Galilei Donna! (unless you've watched it before, but I don't see it on your list)

Your current season chart seems very reasonable, and I usually watch my anime on the weekends too. Weekdays would be too crowded
