I know shows like One Punch Man and Neon Genesis Evangelion did it very well, but are there any others that need attention?

Nothing like Pokémon please.

GeGeGe no Kitarou (2018) has a couple of overarching story arcs, but many individual episodes have a "monster-of-the-week" flavor. Also the first half of Yakushiji Ryouko no Kaiki Jikenbo follows this scheme.

The medicine seller stories that begin with the "Bake Neko" arc of Ayakashi Samurai Horror Tales and continue in the series Mononoke usually run for a few episodes each. Otherwise they present a number of monsters.

Dororo might be another option.

Forgot to include Hataraku Saibou ("Cells at Work!"). It definitely has a monster-of-the-week structure.

The majority of Kekkaishi consists of this.

Saint Tail is also pretty episodic, though it's more of an antagonist per episode.

If you can get past it being for little girls, Cardcaptor Sakura turns it into an art form and I've never seen any other anime do it better. The "puzzle boss" approach and how each defeated monster (not always in a violent way) is added to the heroine's arsenal for her own use (and believe me, almost every single card is used at least once) is really unique.

+1 Saint Tail
+1 Cardcaptor Sakura

Princess Tutu is a beautiful fairy-tale-esque anime that manages to have both an overarching plot and an episodic show structure... and none of the episodes are filler! Definitely seek this one if you want some fantasy mystery, romance, dancing, and orchestral music in your anime.

side note: wow, someone else has actually seen that one 70s Little Mermaid anime film? :O

Trust me, it's far better, actual character development and a plot. It's also more "gives the heroine a new power" than summoning.

Just kidding :) I've heard great things about the show and I do need to watch a good mahou shoujo anime so thanks for reminding me about it

Mushishi and Mononoke are the only shows that had 'villain of the week' type of storytelling that I actually liked. They're both so unique and entertaining.

cool I have these on my list. It's pretty backed up as you can see but I felt like prioritising this mechanic of storytelling just for nostalgia. I used to love seeing what new adversary would present itself in shows like DBZ

In/Spectre could be heading in the monster-of-the-week direction. After two episodes it's not possible to tell yet, but it does look like the story could consist of a number of cases. Could be the sleeper of this season, and it has this ED:

@SeijiSensei I watched the PVs for In/Spectre and I've got to say those are high quality Youkai. I may check this out eventually
