InuYasha for sure, still a good favourite.

Fullmetal Alchemist, and the 2003 version at that. I did end up liking Brotherhood more, but the original adaptation was powerful for me at the time.

A recent one for me is Mahoujin Guruguru (2017 version). I didn't think I'd like it at first, but DAMN is it one of the most charming and funny shows I've ever seen.

Mushishi was like this for me, watched the first episode and was really amazed by it, it's one of the first anime that I've found relaxing and calming to watch, it was something I'd never experienced before from and series in general, no overall plot, just chill.

First episode of BNHA did make me cry. Granted that wasn't my "head over heels" moment but I knew it was special at that moment.

But honestly it does take me a bit to fall in love with a series. I had to attempt MP100, 3 times before it clicked for me.

For me I usually love light hearted and comedy shows pretty quickly like Nichijou and Acchi Kocchi.

"Love" is a bit ambiguous. I attempted to do an ontology of love before, but up until now, I am still having problems how to express my understanding of it. Let's say I gave up on it.

Usually, long-running series will not attempt to make their viewers love its first episode. The more exact feeling would be excitement, expectation, badassery, if one must.

Death Note, SnK, Hellsing, Eyeshield 21, Gurren Lagann, Black Clover

Sophia or wisdom lovers will get attracted to diverse forms of mysteries. If it has a larger scope or area of influence where its axioms can operate or last, the better.

SE Lain, Mushishi, Shinsekai Yori, Paranoia Agent, Gantz

I am deeply intimidated by the concept of love, that's why I will not attempt to describe it, but for this last category, here are some which I find endearingly affectionate and resonating with the message of "one-ness".

Aokana, HaruChika, Urara Meirochou, Cyber Formula.

These are shows that caught me to like it by its first episode only.
Life isn't as fun and easy as anime.

Ah yes that earlier FMA. I got occupied with the thought that FMAB has kinda subpar beginning because it was some fighting...but then I remembered I also watched the 2003 and yes in terms of first episode feels, it's certainly better.

Cardcaptor Sakura, Samurai Champloo, Yu Yu Hakusho, Azumanga Daioh (in literally the first second), Boku no Hero Academia, Lupin III, Trigun, Shouwa Genroku Rakugo Shinjuu, and Gasaraki

Basically anything with a strong aesthetic. With a number of these, I could tell I would love them just from their openings.

Re:Zero, Death Parade, Rokka no Yuusha, Attack on Titan, ACCA, Psycho Pass are a few that hooked me at ep 1.
Now that I look back, most of my favorites took a few episodes for me to really get invested in the story and characters, surprised me a bit.

Cowboy Bebop's setting, tone and character interactions resonated with me from the start. That first episode was simply perfect. Kaiba, FMA 2003 and Samurai Champloo also had me enamored from the get go.

Oh boy time to prepare for the replies I get but i'm going to be honest.

Death note, Code Geass, Bleach, FMA(2003), Beck, Gantz, HOTD, Higurashi, K-ON,NANA, Soul Eater, Suzuka,Yuu-Yuu-Hakusho, Attack on Titan(s1) and DBZ(the first anime that got me hooked).

To me these are just a few I can think of that had super strong first impressions on me. Granted that there a few that got bad as they progressed but they sink and hooked me at ep1.
