Tokyo Ghoul, Death Note, Date a Live, and Chuunibyou are some great examples.

K-On!, Grisaia, Yama no Susume, Gakkougurashi, and Love Live! are some good real examples.

For me it was Steins;Gate and Hunter x Hunter 2011 (which ended up becoming one of my favorites)

I tried watching the first episode of Steins;Gate a long time ago and almost fell asleep, then i gave it another chance about a year later determined to watching it all the way through and loved every single episode, just got better and better. I was completely hooked.

Same with Hunter x Hunter 2011, although i enjoyed it from the very beginning it just got better and better.

Yowamushi Pedal. Starts very clicheic, but gets more and more exciting as the sport is played and as the characters are presented more and more and interact with each other. The anime experience is like a road race, the excitement and adrenaline and drama build up up to the end.

Zeta Gundam and Victory Gundam for me. Started out okay, lost interest after a while and took a break, and i just fell in love with it when i finally got around to continue watching. The exact same thing happened with both.

I gotta mention Gintama just cuz its the most recent one I've watched. Also HxH and Steins;Gate; Really all three are just slow for a portion of their episodes but pick up and don't stop running after awhile.

The first 10 episodes of SKET Dance were fucking boring.
After that it became better and better and since i've finished it i miss it a lil bit.
Same for Gurren Lagann but it blew me away at the end.

For me Psycho-Pass it's the opposite. It started great and the ending was meh.

People here is saying Tokyo Ghoul. The anime was bad. The manga was good and then went to shit trying to be edgy.

Steins;Gate was a snoozefest, but it was worth its time.

You just lost the game

Toradora.

At the beginning I just saw it as an average rom-com. Nothing special. I almost dropped it. Glad I didn't, though. I enjoyed it more and more and I became hooked throughout. Very fun ride.

When I watched Mobile Suit Gundam 0079, I was not into mecha, and the first episode seemed to be very cliché and outdated, but after 15 episodes I started to really enjoy the mecha battles, the political conflicts, and specially how good was the characterization for its age...

The first season of Fist of North Star is really discouraging...

True..
The first few episodes were just straight up disorienting but by episode 9 after Shun's disappearance the show came to life.

It was great to see the class developing together, basically a tale of how korosensei brought them together and united them as a class.

Had to think for a good while, but only one I can think of is FMA: Brotherhood. Years ago I watched the original FMA (maybe 2009/2010) and thought it was alright. Saw that there was Brotherhood, decided to give it a go but didn't like the art style as well as the colour of Edward's hair so I dropped it. I remember it being more bright/colourful in the original. But then last year I gave Brotherhood another go and really enjoyed it. Other then Brotherhood, I don't remember any anime I watched that started boring or kinda meh, and then getting better. They usually starts slow or boring and doesn't improve quick enough to get me hooked before dropping it or starts of decent/good and then goes downhill into a mess.

Higurashi no Naku Koro ni. It got pretty good around Tatarigoroshi-hen (Curse Killing Chapter), but it fully captivated me at Meakashi-hen (Eye Opening Chapter). Though the manga and sound novels were much better...
"Yah!" -Tatsumi (Shiki)

Captain Earth, really hit its stride at episode 7 and made me and my friend glad we hung in there.
This love for Hirasawa Yui consumes me, washing over my dirty weeaboo body with a cleansing warmth that allows me to reach greater heights. It inspires me to be a better man; not the man they deserve, but the man she deserves. Yui, I love you. With everything I have. You are my one, my only. Mai waifu.

+1 Shinsekai Yori
+1 Haibane Renmei

-1 Steins;Gate - I found the first peaceful half to be a lot more interesting, was disappointed with the developement after the events in episode 12, I expected it to be a lot more thriller-ish and less romance/harem-clannadlike-problemsolving (Liked the show nonetheless)

Pretty much this. The comedy got better as the anime progressed, and the serious arcs improved over time aswell.

-1:
Shinsekai yori and steins gate: everything was interesting from the start.

+1:
Gintama, not saying that the first 100 episodes was bad but the later was definitely better.
To love-ru: when the goddess momo had arrived, everything became fapable watchable. (or rather when the author decided to go full fanservice)

Classroom crisis:
the first half was slow.

I can't vouch for that by I think Gintama did. I have tried to watch it many times but I have no interest in it but people, who have watched all of it always regard it as one of the best anime out there so it probably just got better.

Also Kill la Kill. I dropped it at episode 8 beause I didn't know where it was going but when I picked it up again it immediately became better.

I would say Space Dandy. The episodes got consistently better and by the end of season 2 I actually thought the series was great.

I don't agree with the SG and HxH mentions.
Steins Gate was fantastic from the very beginning, while HxH 2011 was more of a roller coaster in quality rather than actually improving all the time. The hunter arc was good, the heaven's arena arc was better, it reached its peak in Yorknew city, got quite mediocre in Greed Island and returned to form in the Chimera ant arc.
5 main aspects I base my ratings on:
1. Did DramaEnthusiast make a thread about it?
2. Is it better than Breaking Bad?
3. Did MellowJello recommend the shit out of it?
4. Has it caused a (very entertaining) shitstorm on MAL?
5. Is it actually good?

Scratch the fifth point, it's not very relevant...
