Somehow you have to balance the two out I guess. I prefer the Yui type, but Ui's cute too

yea ui is definatly more mature but still she can act like a kid at times :D and yui is lazy but she's really nice also and caring

and overall there both really cute :D

the biggest difference is definitely maturity.
ui is responsible and reliable.
she's more of the older sister figure... which is strange, since she's the younger one.

Ui tends to put her hair in a pony tail, while Yui does the double-bar hair decs thing.

Ui is quite possibly better at guitar.

And then there's the difference Yamanaka-sensei noted, but I'll leave that one for someone else...
