I have the same problem, but heres what I do:

1- write a list of the anime series that you really want to watch.

2- watch one series each week ( if the anime is 26 episodes or less )

3- after that watch he second one on your list.

Only a moron tries to watch everything. Just watch what sounds interesting or is rated highly among fans and there you go.
