Fruits Basket, but the first anime kind changed parts of the manga to make its own ending. Same thing with Claymore, except that ending was far worse than Fruits Basket.
As for random shows, I would happily watch more of Hyakko or Hidamari Sketch. Simple reason is I enjoy the characters. The same can be said for Azumanga Daioh except I think that anime ended perfectly so I'm not sure a sequel could work for this show.

I like short series, not series with 3 or 4 seasons. Claymore is an exception for me, now that I'm reading the manga it makes no diference, but the anime series need to continue, they don't need to follow the manga, but it can't end that way.

5. Azumanga Daioh -There shouldn't be an ending to this ;0;

Don't lose hope. Slayers and Ah! My Goddess both recived sequels well after the originals had completed. My fear about Fruits Basket is they changed parts of the manga to tack on the anime ending.
Oh and I agree with others about Shana needing a sequel. There was no resolution at the end of season 2.
As for Death Note, just read the manga since it is better anyways and has a true ending. I don't think I ever finished the anime so I don't know how it ended. Same could be said for Fruits Basket and Kenshin.
