After the first episode of Death Note I was quite enthralled. It was a good series, but certainly not the best I've seen...

Edit:
That is, a good overall series. The first episode was the best start I've seen (thus its mention) xD

Edit 2:
Also, I need to add Shigofumi, which beats out death note.

Hmm... If I had to choose between the anime I've seen so far, I'd find more than one with perfect starts. To narrow it down a little, and choosing the ones less known, I say Miami Guns (I so didn't expect it to be so funny and crazy) and Puni Puni Poemi (which is made of two episodes, I know, but I couldn't stop laughing for a second). And for the series more known, Witch Hunter Robin and Black Lagoon

Shows that come to mind for having great opening episodes are Sayonara Zetsubou Sensei, Black Lagoon, Code Geass, Death Note, Samurai Champloo, Darker than BLACK, Le Chevalier D'Eon, Mushishi, Tsubasa Chronicle, Speed Grapher, Jigoku Shoujo and Ergo Proxy.

If I had to pick a favorite though, I'd have to go with Code Geass - as soon as I saw the first episode I downloaded everything I could find, watching each one as soon as it was done. That made for a long night. =P

Baccano! <3 Ladd Russo from then

Bokurano eh? The person i thought was going to be the main character dies?!

Sayonara Zetsubou Sensei Lol suicide is fun!

Mononoke Looked breathtaking (still does).

Black Cat The fight at the start between him and Creed got me hooked shame it went downhill from there

Darker than Black I was not expecting that! Shame it went downhill from there...

Furi Kuri Complete hyperactive randomness meant this was pure win

Serial Experiments Lain Had no idea what was going on but i loved every minute of it

Rurouni Kenshin Tsuiokuhen Zomgs this Kenshin pwns. He's not the wimpy one from the anime series.

Ergo Proxy Watching the animation was orgasmic. It looked so awesome.

Evangelion has a truly iconic series opener. Of all the first episodes in anime history, this one possibly carried the most impact (no pun intended), particularly in Japan. Some more recent fans compare Eva against shows produced since then, and it maybe doesn't fare as well -- but if you look at that episode in its own timeframe, 1995, it was just on a completely different level than what people had previously seen on TV. This thing went over huge in Japan, and later did the same outside when the first tapes began filtering out, mainly due to an amazing first episode.

But Saber Marionette J's first episode is my own personal favorite. Sweet, mysterious, funny, and action-packed all at once. Very rewatchable.

Strangely enough I was skeptic about all my favourite shows. Except One Piece, but that doesn't count since I started around episode 80+
So...

Basilisk - The first episode was probably the best one. Higly paced and with great music

Black Lagoon - 'Coz Revy won from the first episode onwards.. (until she tried talked English that is..).

Evangelion - Can't really explain why... it just had the "X" factor.

Baccano! - I just needed the opening theme

That's all I can remember for now.

Yeah... I'd agree with Code Geass. I was like one of those people who were reading about new anime and thus Code Geass and I thought it sounded nice. But when it came out there were no subbers. Finally when episode 3 aired, gg picked it up. So when they got the first episode out, I downloaded it straight away and loved it. And hit my head against the wall as I had to wait for episode 2. XD

Tsusbasa is also good. It's kind of boring at first (I watched it for the second time with my bro and his GF and they were like *yawns* with Sakura and Syaoran's last peaceful days) but the ending of it with "A Song of Storm and Fire" just makes up for all it if you ask me. XD

Basilisk too. It started out with freakin good animation, and a tragic backstory. I was instantly hooked.

Romeo x Juliet. Beautiful episode with some good action and stuff. Instantly hooked.

Bakumatsu Kikansetsu Irohanihoheto. Saw the first episode and just liked it instantly. XD

That's exactly why I thought of it - the first part of the episode was a little slow but it ends brilliantly. Yuki Kajiura <3

FLCL - insanely awesome, like all the episodes.... i knew this was going to be totally crazy and it had really good music

Ouran Host Club - fast, good animation... just hilarious and i could see that all the episodes following were going to be just as funny and giddy

Digimon - adorable, corny and lovable characters

Cowboy Bebop - fast paced, totally different, more of a dark episode and made me want more... opening song was amazing

Tengen Toppa Gurren Lagann, Elfen Lied and Gantz probably.
Tengen Toppa is very unique and for some reason I was drawn into it immediately.
Elfen lied and Gantz both have pretty bloody first episodes, but they also seemed to have interesting and original ideas for an anime.
I guess I liked the fact that they portray the world in a darker way.
Also, I liked the openings :)

Thanks De-Jay for my claim picture : ).

Tengen Toppa Gurren Lagann - Such unbridled energy, and the payoff at the end is just jawdropping.

Elfen Lied - This first cel... is a severed arm. If that doesn't lay it down what this show's going to be like, nothing will.

For me it has to be Code Geass. I was expecting a different facial expression from Lelouch but he just did the total opposite. Plus "Colors" as the opening =D

For this season it has to be Goshuushou-sama Ninomiya-Kun. It was quite hilarious for a first episode.

Excel Saga - Hands down! So much hilarious stuff goes on in the first five minutes, I knew I was in for awhile of bleeding from my sides in laughter. Come on, the main character gets hit by a bus and dies before you even know what's going on, not to mention she tramples several people in her path to the road. Brilliant~

Death Note - Such dramatic music in this one .. I'm a sucker for Gregorian chanting songs, even if they're kind of faux. XP; .. Plus, MADHOUSE's artwork is pure .. well, artwork! They got Light's ridiculous facial expressions perfect. XD

Minami-ke - I have a feeling this one is going to be gooood~ .. Just like Excel Saga, I'm going to be in the hospital from respiratory arrest, laughing so much. Chasing your poor little sister and trying to kiss her! Kana is very .. interesting.
