So Ive wanted to read Spice and Wolf manga, then I've noticed that novel have much better overall rating than manga. I wonder why? Is plot/characters or whatever has been a bit changed that made manga worse or something?

The manga simply can't adapt all of the details present of the novel, so novel is obviously more in-depth version of Spice&Wolf, as well as an original one. On the other hand the art in the manga is simply gorgeous, and the emotional moments are rendered perfectly.
I think it's best to read both.

I just ordered Vol. 1-5 of both the novel and manga. I think its worth it to read both.

The novel is really good, the manga seems to skip a lot of the emotions, since it kinda spoonfeeds you the information, which I believe this community of MAL prefer.
Yoshii Kiria took over as leader of Fairytale and rebuilt it and became one of Tsukunes formidable enemies but let's save that story for another time

I saw that the spice and wolf novel has 17 volumes while the manga only 13, i'm reading the manga (i've just started volume 5) so i was wondering if i've missed or i'm going to miss something reading just it, if you know something i would very much appreciate your help!

manga is simply not finished. It's up to volume 10 of the novel, I think. Also, I've heard it's cutting anything that is not "immediately important" resulting in events sometimes difficult to understand .
It doesn't skip whole volumes.

Thank you very much! i was afraid that the manga skipped some volumes just to rush to the ending, knowing that it stops around the 10th volume of the novel makes it much easier for me to follow the story

Since the manga looks like to be finished with volume 16, it skips the volumes that are adapted as Season 2 in the anime (maybe more, I'm at Vol. 14 in the manga and only at Vol. 2 in the novel). Though the publisher might continue it later. Tha novel was also finished then picked up again this year.
