Anyone have any recommendations? There's a lot of anime I've seen that aren't on my list, and which I didn't think were particularly humorous, like One Piece and Gintama.

Examples of series that I did think were both action-packed and funny are Grappler Baki and Samurai Champloo.

Any other action series that don't take themselves too seriously?

For sure.

You have yet to watch Hunter X Hunter, I'd check it out if I were you.
Hajime No Ippo is also good, all the more reason since you liked Grappler Baki.
Also Scryed is really good as well imo. Try D.Gray man and Rurouni Kenshin too.
And since you havent watch Busou Renkin, I say go for it, I mean if your into shounen.

I found History's Strongest Disciple Kenichi to be very funny. Good mix of martial arts and comedy.

I'll second both of those.

Edit:
How did I almost forget to suggest Hitman Reborn. One of my favorite shows, it's a bit long but I like it. The first 24 or so episodes are just random with no real plot, but after then it starts to get more serious while maintaining its comedy.

Strangely enough, and maybe it's because I'm a former amateur boxer, and thus found a lot of it absurd, but I didn't really get into Hajime No Ippo after watching a few episodes. Might have to give it another go.

I've watched some Scryed (decent) and Kenshin (hated it), but not the other ones in your post, and not Baccano.

And regardless of how ridiculous Hajime no Ippo is, some of the fights are fucking sick.

I normally hate resurrecting the dead, but I want to thank everyone who recommended Baccano in this topic.

There are a lot of popular anime which I consider horribly overrated drivel, but Baccano is a truly excellent series which met all my expectations, and then some.

Dunno if you're still looking for suggestions...but I think Tengen Toppa Gurren Lagann is the perfect example of an action anime that doesn't take itself all that seriously.

Yeah, I'll probably have to watch that in the very near future, seeing how it's number 1 on this site and all, heh.

Well don't know if you're still looking for rec's, but here's one: Zone of the Enders: Dolores, i. I'm currently watching it and it has quite a bit of comedy, it's essential to watch the movie/OVA first since it's a direct sequel, but yeah for the most part the series is pretty comical. Seems pretty unheard of too.

Off hand, the best suggestion I can make is Desert Punk. That show is freakin hilarious. I've watched that show about 7 or 8 times now and have no intention on easing up.
