Is it just me, or did anyone else notice that the latest episode has a different art style and quality? Is it possible for an anime series to have different studios working on different episodes or part of an episode?

I haven't watched the latest episode, but yes, it is possible. A great example is Spy X Family where Wit and CloverWorks worked together.

To be hero x which is airing right now has around 3, 4 or even 5 studios working on it, it's not that uncommon

Most series have some other studio help the main studio, if you look at the credits in the ending you'd might end up suprissed on what studio helped.

One recent series i know of is Tbate (the beginning after the end), i only read this fact so i have no clear evidence, but it is said Studio a cat gave the first 2 episodes to a chinese animation studio to animate them.
I am not sure how much they animated but it sounded like a cat wasn't even invoved on animation in these two episodes.

Pretty much all anime have more than 1studio working on it.

It is possible. Spy x Family had Clover and Wit studios alternating. Lot of outsourcing happens. Studios pass work to each other, and ever freelancers get to touch some works.

This episode was different due to Enishi Oshima. Oshima handled the Storyboard, Episode direction and Animation direction for this episode all by himself. Quite the madlad I know

Maybe just stay in the episode discussion for this, where an observant user already cleared up all the facts mentioned above.
Also Ooshima-san is a woman not a lad…

It is very common for an anime to have multiple studios or other studios helping out each-other

Outsource work is standard practice for many studios from what I've heard. There are entire studios in Korea, Vietnam, etc that specialize in outsource projects for Japanese studios. They might only do as little as a set of backgrounds for an episode, or they might do an entire scene. Just depends.

Apparently, one person named Enishi Ooshima did all the work for this episode (direction, key animation, storyboard), which is why it looks the way it does.

For me I didn’t notice much about the quality but it felt like the artstyle was sort of inconsistent. Ik that it’s especially difficult keep a consistent artstyle in animation but the characters looked completely different at points, or maybe it was just me 😭
