I want to start fruits basket however I noticed there's a 2001 and 2019 version. Which one's better to watch and if I were to watch the 2019 version, do I need to watch the 2001 in order to understand the story?

I haven’t watched the first version so I can’t speak for it, I don’t even know if its a complete and full adaption. I haven’t even read the manga for fruits basket or anything.
However despite all that I can strongly recommend the 2019 version. It is a finished story and it’s a bloody good one. The final season of the newer version is the 5th highest rated anime of all time and wholly deserves that title. Each season is a massive increase in quality for me in terms of writing and character depth.
The first season of the newer version felt like an introduction to all the characters, the second season was the development of the story and the third was the amazing finale.
I’m not the only one who’s found the final season season and overarching story actually affected their lives in major ways, it made me think about the way I view a lot of things in my life and gave me closure on past events in my life. I wish I could say what specially but I wouldn’t want to risk any spoiling.
The newer version is separate from the older and it can be watched without watching the 2001 version. I’d recommend this show to anyone.

the 2019 follows the manga a lot more faithful and accurately than in the 2001, even the author of the manga is disappointed by the 2001 version lol.

Watch the 2019 version, the 2001 version isn’t as faithful to manga but I think it’s still fun to watch.

Watch the newer one it follows the manga more then the older version. I watched the older one years ago and I'm glad they made a newer adaption.

Though the 2001 version isn't as faithful to the manga and has its own anime original ending... AND EVEN THOUGH the author herself has expressed her disappointment in the 2001 version of the anime.. I still strongly recommend you start with that as it has its own charms that you won't experience if you watch the 2019 version first.

Here's an analogy.. So there's this restaurant which makes super good burgers with its own unique flavour(lets just call it restaurant A) and it closed down 10 years ago, but after a long time, the restaurant made a comeback with a new burger that is unarguably better than the old burger. The only issue however, is that it doesn't have the same unique flavour as the old one.

If you eat the new burger before trying the old version, you won't be able to appreciate the uniqueness of the old burger because you're too hung up on how much "better" the new burger is..

I hope that analogy makes sense😂
If you watch the 2019 fruits basket first, you might not be able to watch the old fruits basket through and enjoy it for what it is. I also think that fruits basket(2001) handled a Kyo's arc in the season Finale better than the remake.

With all that being said, if you can't handle dated animation, you can definitely start the 2019 version and skip the 2001 version entirely. I personally recommend people to start with the 2001 version, but it's not a requirement and if they can't handle dated animation then they don't have to watch it as the 2019 version pretty much has the same plot points up till the ending of the season

the 2019 one is based on the manga and focuses on the tragic backstories than the 2001 one.

edit: i personally havent seen the 2001 one but thats what people are saying.

Not only is the 2001 version not a complete adaptation, it skips some of the part of the story it does adapt for the sake of making it a more lighthearted romcom. Now that the remake exists there is no reason to watch 2001 anymore. 2019 is a complete adaptation and an absolute masterpiece.

There are 2 different adaptation, one that came out later is true to the source material.
Both are amazing. If you want more comedy then 2001 for sure, but if u want more serious/ drama then 2019. I recommend watching both, they're amazing.

The reboot, that is the 2019 one followed the manga more and set a more serious tone than the 2001 one. The 2001 one is not that bad, difference is that it has more slapstick comedy compared to the 2019 version. I actually watched both but if u finish the entire new FruBa then there's no need to watch the old one anymore.

The 2001 anime adapts the manga to only chapter 38 and has animation that is not appropriate in this time.. so you should watch the 2019 trilogy which adapts the manga perfectly and the animation is also freakin dope

Start with 2019, if you want more watch 2001 because it's great.
If you have trouble getting into 2019 though, I would say check out 2001 then come back to 2019 since 2001 is a bit easier to get into

I watched 3 minutes of 2001 version and closed it when I realised it has a newer adaptation as well.....

That was the best decision of my life

Because the new adaptation is undoubtedly lovely and maybe it is the most beautiful anime series I have watched

Normally I would be inclined to recommend the older and original versions of series since I think they usually have some charm which isn't replicated in a remake or reboot and I also prefer "older" art styles of the 90s and early 2000s compared to ones of the past 10 or 12 years (at least anything post-2009).

However, I've only seen a few episodes of the 2001 iteration and have to say I did prefer 2019 in every conceivable way. The 2019 one just has far more to offer, besides the completionist aspect - It's better for real fans of drama and romance who prefer emotionally whole and satisfying stories where every part is tended to and nothing really overlooked or neglected. It's not so much a matter of doing everything bigger or longer, as much as that it feels like, at least in many or most instances, it goes deeper (can only compare it to the handful of episodes I've seen of the 2001 one, plus the writing of others comparing how they were handled).

It isn't one of my top personal favorite anime for a few different reasons, but I would say the 2019 reboot is one of the better achievements in the field of drama in animation of the past 10 or possibly even 20 years.
