I’m a manga collector and prefer to collect single volumes over omnibuses, but I cant seem to find any original single volumes published in English? Why is it called an omnibus if it’s the original version to begin with?

It doesn't look like the singles were ever released in English so the omnibuses are your only option unless you know another language in which they were released (https://en.wikipedia.org/wiki/Elfen_Lied#Manga). Omnibus simply means multiple volumes bound together, in this case 3 in 1. As a side note, most publishers use thinner paper for omnibus volumes but Dark Horse (the publisher for Elfen Lied) does not, which makes them thicker and, as some people have experienced, more prone to spine creases (I haven't had this problem because I only open pages by 90 degrees)
