I am always more likely to watch an anime that has an incredibly unique plot. It generally results in a more captivating story being told throughout the series.

Tell me which anime had a plot that astounded you with the quality of the story it had to tell.

If I had to choose then I would pick Death Note.

The Tatami Galaxy
Death Parade
Houseki no Kuni
Ghost in the Shell: Stand Alone Complex series

These 4 have the most unique plot imo.

Maoujou de Oyasumi and Girls und Panzer. The "wtf" factor of everything that happens in these series is always a relevant thing that makes them especially interesting.
There are certainly other series with more extraordinary plots, but not really as much in a positive way as in the case of those two ones.

Clannad After Story has a really unique twist to regular romance anime and shows how difficult life can be rather than it being a show which ends at the main couple getting together.

Dr. Stone has a very unique plot as a shounen anime. Even the main goal of the protagonist is unique as well.

I was going to brainstorm and even consult my list to come up with a great answer. But after seeying Maoujou de Oyasumi, my brain melted. Sleepy Princess is to kawaii on the scale of Richter.
When will Black Clover release new anime?! It has been 3 years already since March 2021...

Idk if I know the right meaning behind plot or if it's just main storyline, but Hataraku Saibou is pretty unique.

Sarazanmai....I can honestly say I've literally never seen anything like it. Not even Penguindrum was that level of "the fuck did I just watch".
Dead leaves is easily right up there too. And I've seen some weird shit...

It's Dr stone.I haven't seen anyone comparing it with other anime because it's that unique.

Mob Psycho 100, Its shounen but not your regular shounen, It was just so good and unique. The MC of this show, Mob is one of the best protagonist in my opinion

But then season 2 happened and it turned into your generic shounen.Except for the character development of Mob and Reigen other than that the plot was generic.

Jojo Bizzare adventure,It feels like you're playing those RPG games with the homies back in 90's or this date like ff or Ragnarok, and grinding your level from the evil stand user, not only i kinda skeptical when watching that because of the word "repetitive and boring" BUT HOLY F**KING SHIT,IT'S BELOW MY EXPECTATIONS,The pacing is very fast,it feels like 24 minutes just 12 minutes, and the Stand punch like silver chariot and star platinum Slash and punch torture to enemy is a big plus and makes everyone satisfied especially joseph oh no! and oh my god! lines that will make you laugh

And better not talk about part 2,it's not your typical above average shounen like part 1(which i give it a 2) it depends on tactic and strategy with only items you have in your bag,and the new protag joseph joestar,is very likeable and funny as fuck, not only it's my favorite jojo of all time, but i will defend him like my bias for eren yeager

I guess death note and dr. stone have quite the unique plot and the mc's also have the motive to justify their actions.

Deca-dence, Shinsekai yori, Kuuchuu Buranko(its episodic but the concept is interesting), Bokura no, Ergo Proxy, Inuyashiki, death parade(it wasn't excecuted well tho, bunch of wasted potential) and etc. I didn't really love Shinsekai yori but I am re-watching it now and it kinda feels better ngl.

I meant the whole thing. After story included. The the section you’re referring to is like 7 episodes and parent, child relationship based stories aren’t that uncommon in anime. They be less popular but doesn’t make them unique. Just my op anyway.

It's fine then, I respect your opinion.

Attack on Titan, Death Note, JoJos, and Fate/Zero pretty basic opinion but they’re my favorites.

Baka to test and Re:Creators had some very unique concepts. Whether those concepts were utilized properly is up for debate. Steins;Gate is also pretty unique now that I think about it.

I didn't expect this anime to have a story like....

Before i started this anime i used to watch anime with happy endings where no one dies and if there was a death then they would miraculously come back to life in the end but this anime changed everything. After i watched it, I got more addicted to anime, looked for anime with unique plots and here i am now 6 years later still considers
this to be the anime with the most unique plot.

From what I viewed so far Attack on Titan's plot seems to be unique to me, I don't know why but its finale is totally insane.

Probably Deca-Dence, this one took me by surprise. It also worried me at first if it would go well or not, and it actually did.

I don't know any unique plot since a lot of plot are being recycled over and over again with minimal changes.

But I can name several anime with unique premise.
Like:
Pokemon, Digimon, Yugioh!, Konjiki no Gash Bell, Fate Stay Night, Ginga Eiyuu Densetsu, Gundam 0079 (I dunno if there's a version of man piloting a robot before Gundam), Kara no Kyoukai, Tsukihime, etch. etch.

I could go on and on lmao

I wasted all my time in rewatching to the point of my rewatch total is higher than my overall anime total lmao

Shounen:
Dr. Stone - for its overall premise, that is going so far forward in time that it went backwards, and its focus on science over unrealistic, often fantastical powers.
Food Wars - for its homage to real culinary techniques and the ability to make cooking showdowns as exciting as sword fights.

Comedy:
Konosuba (Kono Subarashii Sekai ni Shukufuku wo!) - for its precedence of being a parody of the Isekai genre, blowing all the classic tropes out of proportion and being genuinely funny.

Seinen:
Erased - for its detective like element in a travel-to-the past format, with a hint of thriller.

???:
Saranzanmai - Kappa, buttholes, and musicals???

Hourou Musuko: anime doesn't really touch on these gender identity topics in a serious way.
Gundam and Macross: one for bringing serious military stories to mecha and the other for it's blend of idol and mecha cultures.
Koe no Katachi: for it's take on disability.
Revolutionary Girl Utena: you can't really describe this show.
Princess Tutu: same as above.
Cowboy Bebop: a jazzy sci fi western. Pretty sure that hadn't been tried before back then.
Serial Experiments Lain: impossible to replicate.
