I'm wary about the title choice focusing solely on the war part; There's like 20-30 chapters left in the war arc that hasn't been covered by the anime. If the sequel only covers the war it would mean we get a 12-episode season. (First season covered 60 chapters / 24 episodes = 2.5 chapter per episode)

It could mean nothing at all; Just something to point out.

probably will be winter 2020 before the anime will air, so got nearly a year for the Manga to get far enough

Yeah I missed the part where they announced a second season, so I was surprised when everybody else knew somehow.

Well, considering the 24 episodes Anime covered 60 chapters and there's currently around 133+ chapters released they can easily do another 24-episode season without running out of material.

However since the title is Stone Wars I'm afraid they'll Just cover the War arc which covers 20-30 chapters in the next season, meaning it will be around 10-13 episodes. Which would suck because this season has been pretty much building up to this war, even in some ways it felt like endlessly building up and then we have a new season just covering the war and nothing more.

It wouldn't be bad if the continuation would be a few months after Stone Wars (Like Q1 2021) but most likely it will be another year wait to see what happens after the war.

Yes it is, I have to watch the last episode of Dr. Stone but I'm hyped for this second season. And I don't say that very often.
