While not a "hidden" gem by any means, I highly recommend Cautious Hero given that you really enjoyed Konosuba.

Zero no Tsukaima is a fun one from before the isekai craze took off that was fairly popular a while ago but has largely been forgotten nowadays. Has 4 seasons.

For REALLY great stuff, I recommend some classics. Aura Battler Dunbine and Magic Knight Rayearth are both excellent.

For a more sci-fi spin on the isekai formula, try Buddy Complex, which has the MC ripped away from his normal life and sent to his world's future, as opposed to a straight up alternate world. Dual Parallel also does a sci-fi take on the genre, and has the MC sent to an alternate dimension.

This one may be a little more far from the isekai definition, but I think you'd still enjoy Suisei no Gargantia for it's fish out of water story about a boy from space and his sentient robot who end up on an unknown planet after an accident.

Not hidden gems but you haven't watched them and they're some of the best isekai you can find
