School days ending changed my opinion about the whole serie

Kyoukai no Kanata, sure it was the biggest asspull ever, yet I couldn't help, but feel happy afterwards.
Kokoro did nothing wrong.

Dragon Ball GT is probably my only case. Mediocre all the way, but that final episode was the redeeming-quality goal right at minute 90. The Dragon Ball franchise just could not have had a better final episode than that.

god this is a really hard question to me

I mean, usually to me animes follow 4 patterns
1- good until the end
2- bad until the end
3- mediocre until the end
4- good start end up bad

the only thing I can think of that kinda fits on the topic is the 3rd part of jojo's bizarre's adventure, because the whole jorney bored me to death until the final fights of course, but it built character afinity inside me and that was really good to the experience overall.

Cowboy Bebop. Well, I didn't thought it was bad (ofc not), but I found it not as good as people said. But in episode 23, Bebop began raising in quality (even more), and the last three chapters were good as fuck, the best I've seen in anime.

I thought Your Lie In April was pretty good, and when the ending happened it turned into an instant masterpiece.

The Scales of Nil Admirali comes in mind from recent memory
and basically every other anime that has a score curve like this

Weird progression category but I felt a similar way about FMA 2003.

Dropped it halfway through, then it picked it back up and really enjoyed the later half.

Psycho-Pass, although it's not the actual ending I enjoyed, it just got better later and at the end I could really appreciate the whole story.

Code Geass S2 was really bad with some enjoyable moments here and there and the ending alone saved it from being a total crap.

Re:Creators was quite ok throughout the series but the ending had a truly great emotional impact.

Space Dandy, given the episodic style of the show I was hit or miss on most episodes but I adored the ending of the second season.

Kokkoku, Kuzu no Honkai, hai to gensou no grimgar, c3, a lot of dark series have surprisingly nice eds
