I haven't completed a huge amount of mecha anime (yet), so my candidate pool is kinda limited.
Even though there are many people who hate Infinite Stratos because of the characters and/or personalities, I still find it somewhat unique with how it handles the mecha designs.
Rather than giant machines, full-body armor, or autonomous units, IS made mecha more into a fashion statement.
Shoulder pads, high-top boots, arm bracers, and head gear.. that's about it other than the weapon.

Looking good & kicking ass... maybe we could call it Mecha-Lite?

My favorite would probably be Gargantia on the Verdurous Planet, but I also really enjoyed Mobile Suit Gundam: Iron-Blooded Orphans, Mobile Fighter G Gundam, and Zoids.

I'm a big Macross fan (specifically, the original series, DYRL, Macross II, and Macross Plus). But I love Gundam too, so it's difficult to pin down which is my favorite.

I mainly like Real Robot mecha, and sometimes Super Robot (I guess Big O falls into that category?)... more or less, I'm into most mecha as long as it isnt the Puberty Robot subgenre
There is absolutely no reason why I should accept "turn your brain off" as a valid excuse to defend a poor show.

Haven't seen many, as a kid I watched Macross but I barely remember it, I only remember I liked it a lot. I also saw some random episodes of shows like Voltron and Mazinger Z, but never completed them.

As an adult, I've only watched NGE, TTGL, Code Geass and Aldnoah.Zero, and I only liked the first one, which immediately became part of my favorites, so that's obviously my pick.

I've yet to see any Gundam. One day I'll watch some, just not now.

EDIT: I forgot that as a kid I also watched Magic Knight Rayearth and The Vision of Escaflowne, which include some mechas, but I've never seen that shows as mecha shows, but rather fantasy/isekai shoujo ones.

Mine are Evangelion, soukyu no fafner, GUNDAM in general, sidonia no kishi and code geass. If I have to choose one Eva, but is really hard to leave the others XD

I've barely watched a few and Kakumeiki Valvrave, its 2nd Season to be even more specific is most probably my favorite.

Neon Genesis Evangelion. While some fans will argue that it isn't mecha since the Evas are biomechanical, the show follows enough of the genre's conventions to be regarded as such.

Other favourites include Gunbuster, Eureka Seven, Gurren Lagann and Mobile Suit Gundam: The 08th MS Team.

From Gundam it's easily Unicorn which perfected the classic Gundam, is extremely well polished (and it's not just about production values), has some of the best mechas and action, the characters are great (especially Marida) and it's overall just amazing to watch. The soundtrack is amazing, when Gundam truly appears for the first time and the OST kicks in it's so fucking epic, out of this world.

from the more unusual/experimental Gundam, Turn A takes the cake with best characters, best story and most of all just awesome atmosphere. Tomino achieved what he wanted to, it's easily his best work. If you're in mostly for robots and actions it might be bit disappointing being much more calm and not having many new designs (outside of turn A which really isn't very pretty).

outside of Gundam there's obviously Macross, I love DYRL the most easily, it's a beautiful watch and I would die to watch it in a cinema. It's a spectacle, it's just so cool, I don't know, I didn't even live then yet it makes me nostalgic for era I never experienced. And the title song is out of this world good.
Other than that, most of its series are good, Delta is kind of mediocre, 7 seems to get a lot of flak (undeserved imo, easily the best MC and the band is just great, every song is good, and that's what matters in Macross). Zero is weird and doesn't feel like part of the franchise tbh.

TTGL is obviously great, a work of the best director of all time, unique style, amazing characters, a beautiful story told through craziness, fanservice, hot bloodedness and great sense of humour. It's an absolutely amazing watch, but as it's highly stylistic it has some divisive opinions.

Big O is something I recently watched and loved, once again a truly unique show, a mecha and mystery combination with a truly intriguing world and atmosphere. It's heavily inspired by western stuff (inb4 that's a demerit, fuck you) and should find many fans even among people who are not into robots at all.

Eva is too obvious, a must watch by every anime fan, talking about it seems bit pointless.
But if anyone who loves it should also give RahXephon a try, which while not quite as great, still should be appreciated by the fans with how similar and how different it is at the same time, a great atmosphere, a slowly revealed mystery, beautiful soundtrack and some great mindfuckery. The titular mecha is also some of my favourites when it comes to design.

Yeah NGE is the obvious answer

Other mecha from my favourites:
Rahxephon, Bokurano (both similar to Eva but take the story in different ways.. Rahxephon being more romance oriented and Bokurano more about suffering)

M3 Sono Kuroki Hagane - one of the very few psychological mecha of the last decade

Gargantia - very different from other mechas.. this one happens on a water world and has very beautiful art style, and memorable story/characters, overall one of the best 1 cour anime i ever watched

Macross (original + movie) - my classic of choice; i watched this instead of Gundam because it only has like 6 series, and they're all shorter than the average Gundam; it also aged way better than other mecha i've seen of its time that were mostly boring villain of the week series, this one has continuity

Brigadoon - as a top review so nicely puts it, "Brigadoon, I am happy to report, does not suffer the cliches usually associated with certain anime categories or genres. It simply doesn't belong to any. In fact, It will quietly defy all attempts at categorization and will summarily step on your face if you attempt it."; it might be a mecha, but just like Gargantia it feels way different from everything else i've seen in the genre, most notably because there is a romance between the main character and the mecha

Gundam Seed and Code Geass.

Gundam Seed is like a classic to me. One of my biggest favorites during my childhood. Code Geass is self-explanatory for Code Geass fans.

Of the few I watched, Cross Ange and Valvrave the Liberator, for being such enjoyable trainwrecks. Code Geass may count as well. I also like Full Metal Panic a lot.

From the small list of mecha shows I have watched I'd say Genocyber (it hits that one spot of my taste), Transformers G1 is good fun to watch looking at all animation errors and UFO robo Grendizer has just really stupid premise to not love. Shout out for Star Driver mecha designs and Magic Knight Rayearth for mixing mahou shoujo and mecha.

If Blame had actually good animation adaptation I'd prob say that, tho I'm not sure why it's labeled as mecha.

The Mazinkaiser OVA was too epic for words, other good ones are Zambot 3, GaoGaiGar, Evangelion, and Getter Robo Armageddon.
