When I mean mature, I don't necessarily mean Rated R, but something with a mature cast or a mature plot.

Something along the lines of

Monster: story of Dr Tenma as he connects murders across Germany to the young boy he saved.
Ghost in the Shell : philosophical themes and conspiracies
LoGH : Masterpiece
Shinsekai Yori : young cast but very creative world and plot
Black Lagoon/ Cowboy Bebop : Not much to say but good interactions among grown ups and plenty of action.
91 Days : decent revenge story
Kiseiiju : got very deep actually

I really dont know what exactly is it that I'm looking for. I just don't enjoy things other people enjoy like fanservice, lolis, romcoms, harems. I mean, I have watched a few of those but I don't enjoy those types of shows anymore.

Here are a few!

  • Gankutsuou : Revenge story, can get quite dark but it also has its light moments.
  • Kaiba : Don't be fooled from the somewhat cartoonish animation, this series is very dark in its themes.
  • Zankyou no Terror : Covers terrorism.
  • Aoi Bungaku Series : A collection of six stories, each are quite mature in theme.
  • Wolf's Rain : I haven't actually seen this one yet but it's looks quite dark, especially given the apocalyptic world.
  • Jormungand : It's not the darkest series out there, but it's quite mature. Jormungand focuses a lot on justice, morality and a myriad of other such themes.

this anime is terrible btw. unless u like anime where each episode doesnt require anything from the previous.....

If you haven't yet seen it: Cowboy Bebop.

I think a mature anime will differ depending on one's situation in life. What's considered mature by a high school student struggling to fit into a social circle is different than what a mid-20s year old who is establishing his or her career and seriously contemplating marriage and family would find mature. To me, the most "mature" anime is one that speaks to me at a given phase of my life, especially one that touches upon struggles that I am experiencing at the given time.

With that being said, the anime that is very likely applicable in terms of maturity to people of various ages, socio-economic levels, and orientations is Cowboy Bebop. To understand why this anime can seriously impact the life of both a teenager and a middle-aged adult, I highly recommend to watch the following interpretation:
