So basically, the title (anime where the MC likes someone but that person likes someone else). If at all possible, I would love it to be a situation where the MC swallows their own emotions and tries to help the person who they like.

Replies made me laugh but I don't know how helpful they were to you, OP ;)

Kids on the Slope is all about this; everybody likes someone they can't have. However, though the characters swallow their emotions for some time, I'm not sure they ever really get to the point where they're actively supporting each other's love. The music and aesthetics of this show are what really stand out about it.

Nagi no Asukara is also really atmospheric (and I love the music here too...) Love polygons for everyone. I think the characters do make decent attempts at swallowing their own feelings and supporting the ones they love.

Honey and Clover sells itself on this. The MC Yuuta spends most of his time hiding his feelings and acting as a support figure to the girl he likes, though I think it takes her a decent while before she falls in love with anyone.

Kuzu no Honkai (Scum's wish) I guess. Both male and female lead have someone they like have feelings for someone else. Focuses more on the dark parts of romance
