Was considering starting One Piece, and I noticed the first 200 or so episodes have an HD remake version, is it fine to watch the HD remake then swap back to the original? Or are there enough changes that I'd miss something switching over?

Just watch the original, the dated animation transitions smoothly.

just don't watch one piece at all. use this chance to make one piece your first manga.
you'll be up to date much faster and will have a much more enjoyable journey.

Are you talking about the movies/specials "episode of ... ?

which I would say no since they skip a lot of material especially in the longer arcs like Alabasta

Better just watch the original (or read manga) and if you ever want to rewatch certai arcs you can watch those hd remake

You should watch the HD remake version then switch. Though to be honest, reading the manga would be the best choice.

I have no idea how the HD remake is different from the original.
I've watched the original two times and it was great, I love that style anyway.
And you never should listen to those who are saying you should only read the manga, those guys aren't normal in the head if they think that One Piece isn't worth watching.
You can always start to read the manga once you caught up with the anime.
